How to Convert EBS 12.0.6 database (in production) from using GMT to EDT timezone

Guys,
I researching how to convert an  EBS 12.0.6 using GMT timezone to EST.  The following is our setup :-

Server Time = GMT
EBS Version = 12.0.6
Database Version = 10.2.0.3
Database Time = GMT, transaction are recorded in GMT in the database


Wondering if anyone in this community has done this before and what it takes?
