iExpense - defaulting employee name on expense type of meals

We would like to default the employee name as an attendee on expense reports when an expense type of meals is selected.  We have setup a policy/rule and attached to the template but the sytems requires the employee to be selected from the list of values.  Looking for any insight as to how to populate it automatically.
