Shipping sales orders complete

 We currently use ship sets to ship lines within an order to ship complete.  This is desired for the majority of our customers; they want an item when we have inventory and do not care how many shipments it takes to complete the order.  For this we have set the profile: OM: Assign New Set for Each Line to "YES".

For a handful of customers they wish to have their orders ship complete in one shipment only.  Is there a way to ship orders complete for a single customer while others accept multiple shipments?  I know that we can manually enter one ship set for all lines over-riding the incremental ship set but I'm looking for a way to automate that so that our CRM staff doesn't have to remember which customers accept full shipments only, or will accept multiple shipments.
