Understand Company Field

Hi all,
I would like to understand where can I define the Company when setting up data for the PIM Module.

In the Peoples , Groups and Companies form and in the Company tab I cannot find any other company than Default Enterprise.

Additionally for all the employees I have created, the Company field is blank in Setup Workrbench.

Can you advise where and how I can define the Company entity?
