Not Changing Deferred COGS account to COGS account

 Hi , When i ship an item ,  after shipment the ( Deferred COGS ) account is hit if i see the material transactions .
After i recieve payment for the order the ( Deferred COGS ) account does not change to COGS .
At which point will the system hit COGS account . And how will i change to COGS .
Can any one help me in this regard.
