Replace Cost Centre - workflow customization

 I am aware that there is a current workflow to replace the Balancing Segment for a transaction.  I need to also replace the Cost centre depending on the OM transaction type from which it came. 

Is it possible to customize the workflow to get this replace value?  What is the name of the workflow and at what step in the workflow should I modify this process if it is possible?
