best way to change the material val acctount

Under average method; What is the best way to change the material valuation a/c on the org_parameters which is greyed out.

One method; I could think of is, to issue out all the available quantities and bring them back after changing the mat.val a/c and other accounting setups.

the question is will it allow to change the accounting when there is no quantities available?
