In WF Builder, how do you associate an attribute to a field

I need to add an attribute from the ap_invoices_all table to an invoice approval notification.  In workflow builder, how do I associate that ap_invoices_all attribute to a wf builder attribute?  Do I need to know some predefined internal name for it, or do I make one up?  Any help is appreciated.  Thanks.
