Schedjuling package deployment

I have been reading that one can schedjule the deployment of a package

I would like to know if anyone has tried it!  and how does it work

Since if i schejule a package deployment lets say for the night at 8pm what happens if a user is using the application

Since when i do it manually before i deploy a package i have to shutdown the http server so that the web instance is down to make sure no one is using the application while i am deploying the update!

Is this correct or can i deploy an unpdatepackage even if the users are using it!
