When is the best time to run COGS RECOGNITION programs?

We are starting to use EBS for the first time.  We are using OPM R12 and PMAC cost type.  When is the most appropriate time to run the COGS recognition programs?  We wish to preliminary weekly closes.  Can the COGS recognition be run multiple times during a month without any issue?
