Does XML Publisher have a feature similar to One-to-One Fulfillment

Hello Experts,

We use Advanced Collections and are upgrading to R12. 
As such, we have to move from One-to-One Fulfillment to XML Publisher. 
With One-to-One Fullment, we could set a test email in the configuration
so that all emails generated went to the test email address and ensured
us that no communications would accidently go out to customers.

QUESTION
I see how to configure email, but couldn't find how to override the email addresses.
