Best method to convert from one currency to another

Any suggestions on best method to convert the Ledger and sub-ledgers from one currency to another. I understand a new Ledger needs to be defined. But, what is an efficient way to bring over activity and balances data from the old Ledger to the new ledger? Also, what about sub-ledger information?
