Creating Picklists

I have added a new field to the Customer Record - Field Engineer - field type = picklist.  There will be only one field engineer per Customer and this is a required field so I didn't want to just add them to the team.

How can I create a pick list for this field that restricts the values to only users with the role 'Field Engineer'?
