Sendmail queries - Newbie

Hi,
We are running a test server with Solaris 10 sendmail Version 8.14.4+Sun to forward mail to staff mail boxes in MS exchange server for testing. 

Is there a way to configure sendmail to bar selected mail accounts (i.e not all mail accounts) to forward to exchange?

Where can I find information of sendmail configuration for a newbie like me?
