Import update is not working when trying to change to a null value

We recently loaded our TEST environment with PRODUCTION data.  When this happens, I would like to change the EMAIL addresses stored in the CONTACT tables to NULL.  I export these tables and make these changes.  When I am finished and try and upload the tables with an IU or UU options, none of the changes to the EMAIL addresses are applied.
So, what is that I am doing wrong?
