Post booking item changes

Does anyone know of a way to be able to change your product/item after the order has been entered and booked?  Users want the capability to be able to change what item was requested if the customer changes their mind.

(We are using ATP & OTM along with order management)

 - I have seen conflicting information on the web about the ability to do this. We are currently at level 12.1.2.
