custom stages

Client doesn't want to use Closed/Lost and Closed/Won (since I can't rename them).  However they do have some field

dependencies (if stage is X, then additional fields are required). If I create a custom stage picklist can it be used to work in

tandem with the out of box stage field.  What fires first the seeded stage dependencies or workflow?  It does'nt seem like

I can do both (have custom stage and dependencies through seeded stage definition).
