Wrong default value appearing in field

I added the Lead Rating field to my Lead page layout. In the picklist I added a new picklist value" N New not yet rated" and assigned in number 1 so it appears first in the picklist. the other values are A, B, C in that order.

I assigned the default value so N appears on New Leads.
Existing leads in my database now show a rating of A for some reason. I would prefer either N or nothing at all, I can't figure out why it is defaulting to A
