Which Assign Sourcing Rule?

Hi,

I get multiple Assignment sets after I select an organization so I am confused in which one I need to define my item for the sourcing rule to take effect.

So can anyone please tell how do I know which is the assignment set that will be effective for a particular organization? Is there any setup/profile option where this is defined?
