Date/Time Field Limitations

My requirements have me needing to track how long a service request remains in a certain status. The list of statuses is much larger than what is delivered so I will need to create a picklist for the new statuses.

In order for me to capture how long the SR remains in each status, I am thinking I need to create a Date/Time field for both the start and end dates of each status. That is putting me at 25 Date/Time fields. I have the Oracle CRM On Demand Deployment Guide and it is telling me that there is a limit of 25 Date/Time records for each Record Type.
