Creating a chart based off of an Editable Picklist field. Need help assigning an "Unspecified" labe

Creating a chart based off of a custom Editable Picklist field.  Not all records contain a picklist value.  The chart groups the records with Null values together in one color, which is shown in the legend.  However, it does not have any label.  We would like a label of  "Unspecified", but I don't see where to enter the label information.  Would someone please provide directions?
