Archival Strategy - Questions on Archiving Data & Metadata/System Build information from CRMoD

 We have a single CRMoD instance setup for each location that we do business in, i.e. we have 5 instances for 5 different locations.

Currently, we need to scrap one of those instances but we want to archive and retain the data and metadata so that it can be restored if required. We plan to perform an export of some sort to extract and store this information on a database we have commissioned but we expect the data to be easily accessible to us via a table which we can query on the fly should regulators or customers request that data. The objects we use are User, Account, Contact, Custom Objects, Service, Opportunity, Notes, Attachments, Activities, etc.
