exporting the configuration using Web Services and creating a configuration document in Access

We have many (country) specific configurations made in CRM on Demand and we always have problems maintaining a proper configuration document for all these configurations. At this moment we are making Word documents and write down the configuration in that document containg, field layouts, (cascaded) picklist values, workflows, role settings etc.
This is very time consuming to make but also maintaining it, because configurations changes are done regulary and after that we sometimes do not have the time updating the documentation.

Ofcourse it is possible, using WebServices, extracting the configuration from CRM on Demand (or make use of the Oracle Migrationtool), so that I will have a lot of .XML files containg the configuration.
