 Looking for tips and tricks configuration an Connected Mobile Sales

Can you configure your Staging and Production environment to display different fields for testing and validation with the users or can only one configuration be displayed for all environments?

Can you configure roles so they can see different fields displayed or are all roles required to see the same fields?

Thanks for any information you can provide or direct me to.
