Workflow from Activity Users

Is there a way to setup a workflow to send an email if a user was added to an appointment?  I think it's great the CRM appointments will integrate with Outlook's calendars, but we want to notify a user they were added to an appointment in the CRM from the "Users" related info.  Thoughts on how to do this?
