Best Practice to download HRMS Data in EBS to file (excel) format

As part of our mission we need to migrate HRMS on EBS 11.5.10 to Peoplesoft 9.2.

Naturally all data in EBS needs to be converted & then moved to peoplesoft. To Accomplish this task first we need to download the current data in EBS like Emp Personal information, Job Data etc.. in excel format.

I am interested to discuss/know the best practice to accomplish the data download from EBS.
