Sub-ledger Accounting

Hello All,
I am very confused on sub-ledger accounting. We plan upgrading in January, and realized that a lot of the "Create Accounting" and "transfer to gl" programs aren't where they used to be. Is this SLA something that needs to be setup? is it automatically setup? Any documents that you can point me to? How do receiving transactions get to the GL? etc..
