Agile Workflow: Can I create a Scheduled-in Delay in a Workflow?

We have a process that requres a 7 day delay before we'd like a person to take action: think of two consecutive workflow statuses as "Cement Poured" and "Cement Cured", and that I want a quality control person to test the cured cement. Is there any way to build this into an Agile workflow using workflow configuration? How about using groovy scripting?
