Best backup plan

We have ORACLE EBS R12.1.2. DB: 11g(11.1.0.7) dbTier, and appsTier. (Each one on a separate server). Servers OS is: Linux version 2.6.18-128.el5 (mockbuild@ca-build10.us.oracle.com) (gcc version 4.1.2 20080704 (Red Hat 4.1.2-44)) #1 SMP Wed Jan 21 08:45:05 EST 2009
We are used to make cold backup at the end of week; And sometimes make export to the entire database.
We intend to enhance the backup methodology. Enabling archive mode and start using RMAN is the best choice we will use.
Any one have a complete steps to make that with How to recover if any thing went wrong; Taking in mind that:
