Change the Inventory Organization assigned in Purchasing

We are going to create a new inventory organization because we need to change our costing method.  I would like to update the inventory organization in our purchasing responsibility to the new one we create, but I saw a note (ID 1321552.1) that said not to do that.  When I try in our test instance it looks like it will work though.  I just want to know if anyone knows how safe it is to make this change.
