Standard Interactivity and iPhone access to Siebel CRM

My client has a High Interactivity testing environment.  They want to change it to Standard Interactivity so they can test access to Siebel CRM via iPhones.
What needs to be done to change High Interactivity to Standard Interactivity?

Anyone with firsthand experience setting up iPhone access?
