Is there any optimal way to defrag / rebuild 24*7 accessible table.

Pls. let me know if there is any optimal way to defrag / rebuild  table online.  I am aware or shrink command but I never tried that on production.

I am looking for some case that’ been tested on production and over 24*7 accessible table.

Database Version : 11G
