How to determine where the Inventory Cost Segments are derived from in Cost Management

I am running the Cost Management 'Transfer to GL' process for Inventory and all Inventory Transaction accounting is changing the first string (Company Management Segment) to a value that I cannot see setup anywhere (outside of the Value Set).

Can anyone advise where the cost account is derived from for Inventory in Cost Management?
