Oracle virtuale SERVER OVS or VMWARE

I plan to virtualise my infrastructure with Oracle recommandation in server and storage:- EMC vnx for storage
-HP DL380 G7 for server.

My concern is to know if I must use OVS or VMWARE as tool of virtualisation.
If I use VMWARE is it possible to use a machine virtual like OVS and to deploy the machine virtual OVM manager starting from the machine virtual OVS.
