how to upgrade custom ENV

hi 
we  have created custom ENV (cust812)   which  have its own business data & own custom object .    the plan to go for 9.1  upgrade .

My question is how  to upgarde the custom ENV and  preserve  all the  custom object (55-59) . 

can i create upgarde plan and do spec Merg.   also  upgrade the  business data .
