Using Vertex - Does the Vertex software recalculate the GeoCode when and Override address is entered

I'm trying to determine if Vertex handles the following scenario or whether it's something that will need to have a mod-

Sales order entered using Ship To address book record (example, ship to is located in Colorado) but customer is requesting we deliver directly to their customer in California.  When we enter the sales order, we use the Ship To number in Colorado but override the address to be California.

Does Vertex calculate tax based on the Override Address (California) or does it use Colorado (from the Ship To record)?
