Payment Process Profile (PPT) to use when configuring SEPA Payments

Hi,

I read in SEPA Credit Transfer V5 R12 Whitepaper that there are 2 seeded Payment Process Profiles that can be use to setup SEPA Payments: Structured and Unstructured Remittance.

I am new implementing SEPA, how can I realise of which PPP should I use?
