How to create a new journal category?

Hi all,
I want to create a new journal category(xyz) for payables(journal source) .
1. When ever we use a particular pay group, the journal category should be xyz
2. For all the invoices paid with a particular charge account, the journal category should be xyz.

Please let me know which one  of the two points is possible and how to do it.
