Workflow- Wait Functionality

I have a quick question on the Workflow – Wait Period.
Requirement : For one of our client, creates an Appointment record for the Client Visit. Start Time will be selected. A follow-up email needs to be sent after a month.
Implementation Process : Currently we are using the Wait functionality. We all know that the workflow will be triggered based on the trigger event and will be waiting in the Workflow Monitor. The Resume at is fixed based on the workflow creation / modification time.
Issue : Original appointment date is on April 25th. Workflow is waiting in the Workflow Monitor and is set to resume on May 25
