Cases: Calculating business days help

Hi I wanted some help understanding the formula to calculate business days on cases. I read the doc Calculate Difference in Business Days - New Method.but am a bit confused still how it works etc.

If a close date / open date /response time is on a weekend or out of business hours how will it calculate that or i presume it wont count the hours?

Most of my reports are either Avg. # of days or hours to close/resolve a case, the resolution time by days:hours;minutes and then I also have activities to calculate the hours that it was on hold at the customer or someone else.
