Upgrade from SEA 8.1.1.4 to SIA 8.1.1.10

 I've seen a few posts regarding the upgrade path and I have a few questions.
1) I don't believe we would upgrade to 8.2.2.2 because we aren't in any of those specific verticals (i.e.: Finance, Travel, Retail, etc.).  Does this mean we upgrade to SIA 8.1.1.10 and choose a random vertical to go to?  I'm assuming it wouldn't matter what vertical we would choose because SIA is a super set of SEA?

2) Does it matter if we stay on the 32-bit version of Windows 2003 R2 for the 8.1.1.10?  I don't see any of the 8.2.2.2 pieces under the 32-bit selection so I want to make sure that 8.1.1.10 is going to be supported for the near future or if we will miss out on any functionality specifically/exclusively designed for the 64-bit platform?  (I've looked at the supported platforms documents and it says that 2003 R2 32-bit server is supported but I want to make sure we aren't going down the wrong path.)
