Custom User Profile Options

Hello,I'm wondering if anyone could give some advice as to whether or not this is possible...

I have a custom profile option to set a default printer at the user level.  I want to enable to user to have the ability to change this profile option for only themselves, but only this profile option.

I understand there is a "Profile User Values" function that allows users to change their profiles.  I guess what I'm looking to do is to be able to give users access to this function, but only allow them to change this one profile.
