Documentation On Creating Organizations

Hello,
My company has just purchased another company and wants to set it up as a Subsidiary.  However, the new company will also have Service Outlets which will "roll up" into it.  Our current organization setup was done over 10 yrs ago and the persons responsible are no longer here.  I would like to know where i can get documentation to guide me in setting up organizations.

Currently using Oracle EBS R12.1.3
