Batch processing steps

Hi,
I have successfully done the "Using Oracle GoldenGate for Oracle to Oracle Database Synchronization" tutorial to replicate data from One schema to another on same database.

As 2nd Step of our POC we need to know how to do this replication process as batch. 

Example we run updates/inserts to the source from 1PM to 1:59PM. 
Then starting 2:00PM we need to replicate that changed data in Target.

How do we do that in GoldenGate? Is that simple as stopping REPLICAT and starting at 2PM.
