Changing Labels in Charts different from Assigned

In a bar chart, is there a way to change the label for each bar that would be different than the names assigned to them? Example in a chart representing different Stage Categories.  If I want to label each Stage Category than what was assigned to them in the system, is this doable?  I am not referring to changing axis labels or column names. Thanks.
