Access Profiles in Books

Currently we have a very open security policy and everyone in the book has the same Access Profile for Owner and Default access. The same profile has been assigned to them in the Book.

Now we need to make some changes to the access between Owner and Default access.

For that purpose a new access profile has been created and assigned in the Role. However in the Book we can only assign a single profile.

Which profile should be assigned there?

and How does it affect the access for the other profile?
