Export - Import functionality

Hi,
I have added a NEW picklist field under Opportunity object & now in order to show value under existing records; I want to use Export - Import feature.

So, my query is can I simply export the data & enter value for that field under existing records manually (in excel) & then re-import. Does this impact any other area or it will simply reflect the values entered on front-end?

And while re-importing which fields should be kept in excel except the field where I entered the values?

Appreciate your quick help please.
