Payments in currency other than invoiced

The company has an operating unit in Mexico with a base currency of Mexican Pesos. They have agreements with mexican vendors that invoice them in USD to pay in either USD or Pesos, however; if they pay in Pesos, they must adjust the payment to reflect the USD/MXN exchange rate as of the day of payment.
Example:
Invoice is entered in USD using the Vendor's USD site. The exchange rate is entered as of the day the invoice is entered. When the payment is made 30 days later in pesos, the exchange rate must be changed to reflect the current spot rate.
