Manual-Action Date

Hi:

I would like to know if the dates associated to PO actions (approval, signature, etc) can be in some way manually updated. If not, is there a way, apart from creating DFF, in which date can be manually entered in a PO for a specific action?

Most PO we are handling do not have a Signature process assigned in the application, but we somehow want to enter the date in which the actual contractual document has been signed.
