Is there any way to implement sudo su versus just su for root

Per the documentation, Ops Center uses su to su to root as needed, is there any way to implement sudo su to elevate access? Since we use an application account for the inital login, which is added to the sudo.users or sudoers files, and we change our root passwords every 90 days, we're trying to get away from having to modify each servers credentials ( in Ops Center ) every time we change our root passwords. This just adds a few days extra work as we have several hundred in Ops Center.
